The first key to success is variety and contrast in taste, texture, color, shape and country of origin.
Choose an assortment of three to five varieties of cheeses. Plan on four ounces per person as an appetizer or three ounces as a cheese course at the end of a meal.
Leave the cheese in wedges and allow your guests to cut what they like, or cut it into slices or chunks.
Use a separate knife for each type of cheese.
Remove the cheese from the refrigerator and unwrap it at least an hour before serving to allow it to breathe and come to room temperature.
Be creative with your choice of bread and crackers. Try French baguettes, Italian semolina bread or whole grain bread as well as bread sticks, bagel chips and flatbread.
Try pairing cheese with a variety of fruit, olives, toasted nuts or fig cake. They all combine deliciously with cheese.
Try your cheeses with a variety of beverages. While wine is excellent with cheese, try craft brewed
beers, ciders and other beverages as well.
Store your cheese in the bottom (coldest part) of the refrigerator. We use a special micro-porous plastic film to wrap the cheese in at time of sale. This film protects the integrity of the cheese. After opening, the cheese should wrapped in wax paper or foil so that it retains the ability to breathe.
